365 Project – 64 : Simple pleasure: blackberry strudel for Sunday brunch (March 4, 2012)

Last year I posted my recipe for this fast and easy blackberry strudel but, neglected to mention how well it freezes and reheats for later use. To add some pizazz to a Sunday brunch with friends, I found this strudel in the freezer, adding the perfect sweet note to our Sunday brunch spread. Of course, my daughter and I had to test it out the night before. 🙂 To reheat, just pop the frozen, previously baked, strudel in a preheated 350 degree oven. Bake for 30 min. or until warmed through. Serve as is or grate some lemon zest on top next to a scoop (or two!) of vanilla ice cream.  My daughter helped me pick most of these juicy backyard morsels and make these strudels.  I LOVE that we are still enjoying them just because of a little forethought to make extra for the freezer.  Just a simple pleasure that makes me happy! 🙂
